Selection & Storage
Look for firm, well shaped and fairly smooth potatoes. Avoid potatoes that have wrinkles or any bitter green discolorations. This is caused by overexposure to light and is called light burn. Also avoid potatoes that show signs of sprouting, wilting, or decay. Store in a cool, well-ventilated area rather than refrigerate.
