Murasaki means purple in Japanese, which refers to this varietys purple-red skin. Beneath the skin is white flesh that turns golden when cooked.

Compared to orange-fleshed sweet potatoes, the Murasaki has a more earthy, nutty-sweet flavor and a much drier, starchier texture akin to a cooked Russet potatoits the perfect choice for sweet potato fries and tempura!
