Chimayo Chorizo Sausage Spice

A chorizo spice mix for easy, homemade chorizo. All you have to do is add this seasoning to ground pork! This chorizo spice mix for Mexican-style sausage has a bit of a Southwestern twist, with garlic, sugar, chiles, and Mexican oregano. For sausage patties or links, mix 4 tablespoons of sausage spices with 2 tablespoons cider or wine vinegar and 1 tablespoon water into 1 pound of ground pork. Refrigerate for 3-4 hours for best results.
