Small in size and abundant in flavor, these beauties are a gourmand’s dream. Melissa’s Baby Artichokes feature bright green color with sharp tips and offer the same great taste as large artichokes.

Consuming artichokes require a bit of work, having to tediously pluck petal after petal, usually dipping into a lemon aioli or melted grass-fed butter. Baby artichokes are much easier to prepare than their larger counterparts because they haven’t developed the fuzzy portion of the choke in the center. You can grill, braise, bake, roast or saut! This treat pairs well with dry un-oaked wines and herby risottos.

Look for firm, thin, compact leaves on these tiny treasures measuring 11/2 to 2 inches high. Their color should be bright green without much discoloration. Store them unwashed in a plastic bag in the refrigerator, and they will last up to a week.
