Piloncillo is a Mexican sweetener that is traditionally made from whole cane juice that has been cooked and then slowly caramelized. It has a rich, caramelized flavor and a slightly smoky aroma. Piloncillo can be used in meringues, syrups, ice cream, sherbet, glazes, pastries, and candies and is used to sweeten hot drinks like coffee and Christmas punch (ponche).

The equivalent of 3/4 cup packed brown sugar, one Piloncillo cone can be used to adjust the texture and taste of many foods and works very well when combined with cinnamon.

Store in an airtight container in a cool, dry place. When correctly stored, Melissa’s Piloncillo will keep indefinitely.
