In Trinidad, a ‘callaloo’ is a delicious dish made by blending a variety of ingredients. A Trinidadian man came into our shop once claiming that his mother made the very best fried chicken on the entire island. So we mixed up Trinidad Spice blend–a gingery-garlicky-lemony-with-a-hint-of-clove blend–on the spot from the ingredients he remembered.
